As you walk, you will hear about the deep roots of olive growing in the Iblean hills — a tradition started by the Greeks and enriched by the Arabs, who left their mark on the island’s agricultural culture.
Your path leads to the estate’s modern olive mill, where old knowledge meets new technology. Here, experts explain how olives are carefully harvested by hand and pressed at the perfect stage of ripeness. You will see the machinery and understand production — from the two-phase decanter to the vertical mixers. Finally you will learn how the oils are stored in temperature-controlled silos to preserve their aroma and freshness.
